Ingredients:
- 2 large sweet potatoes, peeled and diced
- 2 tbsp olive oil

- Salt and pepper to taste

- 8 small corn or flour tortillas
- 1/2 cup crumbled feta cheese
- 1 avocado, sliced

Instructions:
